Caprese Garden Bowl

Summer is still upon us and that means the light lunches are still in full swing! I came up with this Bowl when I ran out of spinach wraps for my Caprese Wrap recipe, and decided to throw in some other common-household-fridge-items. It’s great to pack for work, on the go or just at home-especially for me when grad school limited grocery shopping time and I had to find a filling pick-me-up at home. Every bite is so fresh and delicious, and I love cooking/creating with colorful ingredients!

You can customize your Garden Bowl any which way you like, but here is recipe based on my own fridge staples:

  • Tomato
  • Avocado
  • Eggs
  • Basil Leaves
  • Balsamic Vinaigrette
  • Mozzarella Cheese


Essentially, you just slice and dice: avocado, tomato and mozzarella.

It’s easier for me to cut in half a hard-boiled egg for this recipe, need that protein!

Add in some basil leaves to taste, drizzle some balsamic vinaigrette and VOILA!
