Perfect for a light, quick lunch! I love cooking food that is easily digestible.

For the E(gg) A(vocado) and T(omato) toast:

  • Whole wheat toast
  • Sliced organic avocado
  • Sliced tomato
  • Sliced hard boiled egg
  • Drizzle with balsamic vinaigrette

For the side:

  • Whole wheat couscous
  • Mix in Julienne sliced sun-dried tomatoes
